irish soda bread

happy st. patrick's day! in honor of today and my irish heritage, i wanted to share my family's favorite recipe for irish soda bread. in my experience with soda bread, i've found it (often) to be very dry and crumbly (which i'm personally not crazy about). not so with this recipe. this   produces a cake-like bread that is so deliciously moist. and just perfect for breakfast, lunch, dinner or a snack : )

best soda bread ever! (adapted from a silver palate recipe)

6 tablespoons sweet butter
3 cups flour
1½ teaspoons salt
1 teaspoon baking soda
1 to 1¼ cups granulated sugar
1½ dried currents or raisins
1¾ cups buttermilk (or 1¾ cup milk with 2 tablespoons vinegar)
2 eggs, well beaten

1) smear 2 tablespoons of butter evenly in a 10-inch cast-iron skillet. line the buttered skillet with a circle of waxed paper. melt 2 more tablespoons butter in a separate pan and set aside.

2) preheat oven to 350 degrees

3) sift dry ingredients together. add currents or raisins to dry ingredients and toss well to coat.

4) whisk together buttermilk, eggs and melted butter. add to dry ingredients and mix just until blended.

5) spoon better into the prepared skillet and smooth top gently with a spatula. dot the top with the remaining 2 tablespoons of butter.
6) bake until golden brown and puffed, about 60 minutes. cool slightly, remove from skillet, and cool completely on a rack. or serve warm directly from the skillet. cut into wedges. smear with butter. enjoy!

gettin' lucky : )

as a (50%) irish girl, i revel in the romanticism that accompanies st. patty’s day. each year, my parents host an authentic corned beef and cabbage (and soda bread and potatoes and roasted vegetables...) irish feast on the 17th of march. much of my extended family attends, and we celebrate our irish heritage with food (and drink).

yet, despite my irish roots, i don’t believe in luck in the mythical, haphazard, out-of-the-blue sense. in my version, real luck occurs when the right circumstances come along and you capitalize on them. but, had you not been thinking about, working on and wishing for a “lucky break”, then you wouldn’t necessarily have recognized it as “luck” when it does come along. i also like this version of luck because it gives you some control. i.e. if you’re diligently working towards an important goal, you’re much more likely to catch a lucky break…

yet, despite my somewhat business-minded view of luck, i do (kind of) believe in lucky charms. (i know, i’m a rubix cube of contradictions.) i have a beautiful vintage wishbone pin from my grandmother that i love and consider it a bit of a “lucky” charm. i’m not sure if it has magical powers or just sentimental value, but i love to wear it on special occasions.

well, before i confuse you (and myself) any further. here are some other notable thoughts on luck:

“i'm a great believer in luck, and i find the harder i work, the more i have of it.” –thomas jefferson

“luck is believing you’re lucky.” – tennessee williams

“luck has a peculiar habit of favoring those who don’t depend on it.” – unknown

“success is simply a matter of luck. ask any failure.” – earl wilson

“the day you decide to do it is your lucky day.” – japanese proverb

“what we call luck is the inner man externalized. we make things happen to us." – robertson davies

so…do you believe in luck? what is your lucky charm?

well-designed living

me : )

as part of jess' design your life series, i wanted to do my own DIY design your life post.  her blog, makeunder my life, is about designing a (fabulous) life with intention, purpose and passion.  so, though i may not get it right all the time, i thought i'd like to share how i (attempt to) live a well-designed life...

1. stay strong.  when i first started exercising regularly 5 years ago, it felt like torture to drag myself out of bed (earlier than usual) to fit in a 15-20 minute workout.  but now, i'm so happy that i stuck with it.  in "pushing beyond the pain" i found that i really like moving my body.  i like feeling strong and fit and flexible.  it makes me walk with confidence and stand up a bit straighter.  now, believe me, i don't pop out of bed anxious and excited to workout everyday, but i always feel better for doing it.  and with small steps, i eventually (5 years later) have built up to 60 min, 5 days a week.  i encourage you all to find the beauty of connection through working (with) your body.  (my recommendation?  try yoga.  it's fabulous for both body & soul.)

2. everything in moderation...including moderation.  (i think mae west was the first to say that, so i can't take the credit.)  i eat healthy, wholesome foods at least 80% of the time.  the 20% is reserved for dinners out, drinks with friends and dessert.  i've finally learned that deprivation has no place in a healthy diet and that all things...yes, that's right all things, including chocolate and fried food and mac n' cheese and pancakes...can be enjoyed (from time to time).

3. happy hour is what life is all about.  ok, let me explain.  life is about the small moments.  not just the big ones.  take the time to enjoy and appreciate your life where you are right now.  don't wait for the weekend or for when your "to-do" list is done or for when you lose 10lbs, because there is always an errand to run or something else that "should" take priority.  make it a habit to give yourself a break and enjoy the here and now (with a $5 cosmo in hand : )

4. follow your bliss.  this point i cannot stress enough.  life really isn't just about finding a (tolerable) job in order to make money (though money does have its perks), it's about finding something you love to do.  the money will come.  trust me.  if you create a career around what you love, you'll be wonderful at it, and it will feel a lot less like work.  trust your gut, have faith in your abilities and craft a life around your true passions and what you're truly good at, and the right path will unfold before you.  it's magical.

5. learn to love yourself.  this is not always easy...especially for us girls.  but it's worth working toward.  if you learn to love and appreciate yourself, life gets much simpler, because you're working with yourself, instead of standing in your own way.  take it one step at a time.  treat yourself well.  feed yourself wholesome food...80% of the time.  and move your body a bit.  it'll thank you for it, and you'll begin to see the beauty that was always there.  (and don't beat yourself up when you enjoy a piece of cheesecake or one too many glasses of wine.  life isn't supposed to be so damn serious : )

well ladies, i believe that's enough wisdom rambling for one day.  and remember, design your life just for you.  no one else.

.

so i'm stylish, eh?

a big thank you to marie from wild, then child for bestowing upon me the stylish blogger award.  i'm completely flattered : )

so, in order to accept this lovely award, here are the rules:
1. link back and thank the fabulous person who honored you with this amazing award : )
2. share 7 things about yourself
3. award 7 other deserving and great bloggers
4. contact the other bloggers to let them know of their award.

so, here goes nothing...

1. i start my days (well, my mondays through fridays) with a workout.  it's nothing super intense or crazy (though i am a p90x veteran...but that's a story for a different day), just something that gets me up, moving and feeling a bit more connected to myself.  often it includes some yoga : )

2. i eat the same thing for breakfast pretty much every day.  i just love me some cereal.  but not just any cereal.  i mix up a mean concoction of all my faves, add in special extras like pecans, dried fruit and banana, sprinkle it with cinnamon and nutmeg and cover it with soy milk.  omg...sooo good.

3. i live in a cottage.  an honest to goodness cottage with my fiance and our cute little dog.  our kitchen is so tiny the fridge doesn't even fit in it, but we call it home.  plus it has a cozy fireplace which makes me happy.

4. i love to cook.  and i think adding sauteed or caramelized onions makes just about any meal better.  i rarely follow recipes but love to read them (and food blogs) for inspiration.

our dog baby, olive : )

5. i am a dog mommy.  craig and i adopted our little girl, olive in november of 2009.  she's beautiful and adorable and makes me smile non-stop.  last week she turned 2, and we had a little get-together with her doggie friends.  yes, we spoil her, but she totally deserves it!

6. happy hour makes me happy.  craig and i go to our favorite happy hour place, bobby simone's, just about every day week.  i just love that the bartender now knows our drinks.  being a "local" is fabulous : )

7. i love my blog.  lifestyle maven is my true passion, and (full disclosure) i want to become a full-time blogger.  i enjoy nothing more than sharing my ideas, tips and techniques for well-living with my readers.  you guys are the best!  thank you.

so...who do i think is super stylish and wonderful?

melissa @ tasting, touching, hearing, seeing
megan @ the oatmeal diaries
brittany @ les reves d'une boulangerie

seems like a french/breakfast theme as far as my honorees go : )  congrats ladies - you're fabulous (and stylish of course)!
