how to win friends & influence people

so, you want to know the real secret to winning friends and influencing people?  bake them bread.  it never fails.  my sister shared this no-knead (super easy/simple/fun) bread recipe with me a while back, and i've been enjoying homemade, fresh baked, yummy bread ever since.  so, i guess the cat's out of the bag.  i can no longer impress people with my super refined bread baking skills once they read how easy it is...

...oh well.  it's totally worth it.  fresh baked bread for all!  (this recipe makes 3-4 boules)

3 cups warm water
1 tbsp yeast
1/2 tbsp salt
6 1/2 cups flour

1 large bowl - that will allow dough to quadruple in size
clean dish cloth

mix yeast and warm water.  add salt.  add flour.  mix with wooden spoon until dough forms a loose ball.  do not to over mix.

leave dough in bowl and cover bowl with dish cloth.  allow to rise for 2 hours.  dough will quadruple in size.

at this point, you have a few options.  you can cover dough/bowl with plastic wrap and foil and refrigerate for a few hours (or up to 3 days).  i recommend this because cool dough is much easier to handle.  or you can freeze the dough (for months).  or you can bake it immediately.  or a combo of all three : )

whichever you choose, when baking time comes, flour your hands and work surface and take approx. 1/4 of the dough and form a boule (i.e. round loaf) by folding dough in on itself, so the top is round and smooth and all "loose ends" are tucked under loaf.  (tip: when forming boules, it's a great time experiment with add-ins.  my personal faves are homemade pesto, asiago cheese or pecans, cinnamon and sugar.  to evenly distribute, flatten dough and spread fillings over it.  then fold dough in half.  then in half again.  then form boule by tucking ends under loaf to form a sphere. yum!)

place the boule on an oiled baking sheet (sprinkled with cornmeal if you have it) and allow to rise, uncovered, for 40-60 minutes.  before baking, cut a slash or two across top of dough to allow air to escape during baking.

then bake at 425 degrees for 25-30 minutes.  when dough is golden brown and smells intoxicating, it's done.

(if you're going to use the dough to make a pizza crust - which i highly recommend - you can skip the "second rise".  just take dough out of fridge, flatten it, top with sauce, cheese, veggies, amazingness, etc. and bake at 425 for 25 minutes or so and enjoy : )

once people sample your fresh baked bread, you'll have more friends (and allies) than you'll know what to do with.

Design Your Life!

You are the designer of your life. For better or worse. The only person keeping you from reaching your dreams is you.  Now, I know that sounds a bit "in your face", but sometimes we need to be hit with the reality in order to make a change.

So often, we stand in our own way. (I know, I hate when people tell me that, too.) We self-sabotage our best efforts and then give up, feeling like a wounded victim. But, just like we have a choice in our happiness, we have a choice with the direction our life course takes. We are the designers of our lives. Designing is a creative process, but not a haphazard, caution-to –the-wind kind of artistic endeavor. Design requires planning, thought and, yes, a bit of creativity never hurts. Also, design is meant to be fun. So often our lives become so serious, so adult. Did you know that the average adult laughs just 15 times a day? The average child laughs more than 400.  Kinda sad, isn't it?

How often have you written a life list with all the wonderful things you wish for yourself with as much gusto as you compose a grocery list? Do yourself a favor and recognize your role as the designer of your life. Write down your goals, and share them with friends and family. Do anything you can to make them more real and tangible right now! It’ll take some time, but once you see yourself in this role and begin to accept it, you’ll be gifted with an amazing power. You’ll be able to craft the life of your dreams (and also recognize what dreams are truly vital for you to follow your bliss). Our life paths are not random. We all have a gift and a purpose. Our purpose is not always clear, but that doesn’t mean it’s not worth looking for and exploring. And remember, your life mission can shift, morph and change. It’s OK if what satisfied you in your twenties no longer works for you in your forties. Reevaluate and redesign. Design is an evolution. It’s constantly shifting and developing. There is no “start” and “finish”.

Maintain Your Motivation

Isn't it great when you first set a goal for yourself?  You're so pumped and ready to go and just know that you're going to succeed.  Nothing can stop you!  Fast-forward one week.  Still feel the same way?  If you're like most people, probably not.  After the first few "honeymoon" days, reality begins to set in.  You start to questions yourself and your resolve.  So, how do you power through when your motivation is fading fast?  Below are some simple, easy tricks to harness your motivation to reach all your healthy lifestyle goals!

1. Change your vocabulary. Saying "I want to workout" or "I choose to eat healthy foods" is much more empowering that victimizing yourself and saying "I have to..."

2. Make a list. Making a list of all the reasons why your healthy living goals are important is a great way to harness your motivation. List everything from "fitting into my 'skinny' jeans" to "being able to play with my kids". Reread the list whenever you need a motivation booster.

3. Share your goals. Sharing your goals with others is a great way to hold yourself accountable. Telling your family and friends what you're hoping to achieve is a wonderful way to motivate yourself because if you fail to reach your goals, you'll not only disappoint yourself, but you'll have to "explain" it to your friends and family.

4. Recruit a friend. So many of us aim to get healthier as one of our primary goals. So, why not reach out to a friend, sibling or spouse to accompany you on your journey. Teaming up is a fantastic way to get your butt in gear!
